Pesto Chicken with Quinoa and Old School Jams

Today is “band” day at my internship. While most are keeping it classic with AC/DC and The Beatles t-shirts, you know I had to embrace my inner gangster and kick it old school.


Anyone remember these guys? I’m a HUGE fan of old-school hip hop (not so much the crap that comes out today) and Run DMC has always been one of my favorites! I’m pretty much obsessed with them, Ying Yang Twins (shake it like a salt shaka), Lil Jon and the Eastside Boys (I bet you won’t get crunk!), Nelly (so hot in HURR), old school Lil Wayne (Tha Carter 1-5), Eminem, Vanilla Ice, LL Cool J…. the list goes on and on.

If it involves rap and the potential to shake my booty (and/or sing rap along), I probably love it.Β Most of my gym playlists include the artists listed above. Don’t be surprised if you catch me shakin’ it in the gym πŸ˜‰

In food news, last night I made the most delicious dinner so obviously I had to share with all my peepz:


You’ll Need:

  • Quinoa
  • Chicken breast
  • Pesto
  • Avocado
  • Squash
  • Zucchini
  • Brussel Sprouts


  • Add 1 cup dry quinoa and 2 cups water to a pot. Bring to a boil. Reduce heat to medium/low and let simmer until all water is absorbed, so about 15-20 minutes. Remove from burner and let it sit for 5 minutes (still covered). Fluff it up a bit and it’s done!
  • Sprinkle 1/2 lb. chicken breast with whatever spices your little heart desires (I just used garlic salt) and cook in a pan
  • When chicken is almost done, add zucchini and squash. Stir frequently to make sure all vegetables cook evenly
  • Steam brussel sprouts either stove top or in the microwave. You may also roast them if you have more time, so delicious!
  • Add 1/2 cup cooked quinoa, 4 oz chicken (half of what you made) and veggies to a bowl.
  • Top with 1 tbsp. pesto and avocado, and enjoy!

Note: I bought my pesto from Publix, but here’s a delicious (and easy!) recipe from Food Network if you want to make your own.

  1. I could probably go all day on what are my favorite old school jams, so I best not even start listing them. I would probably wear a Hawaiian shirt in honor of The Beach Boys, but I must admit I have an AC/DC shirt and their music gets me pumped before or after a workout.

    It is funny you mention Vanilla Ice. People always hate on “Ice, Ice, Baby”, but when it comes on everyone including the haters is out on the dance floor shaking it.

    I am not a huge rap fan, but I do really like Lupe Fiasco. The Run DMC duet with Areosmith covering Walk This Way is awesome!!!


      • That is one song that I can’t help but dance to when I hear it. I would challenge you to a dance off, but I’m sure you would destroy me!! “Can’t Touch This” and “Super Freak” are two other old school songs that make me shake what my Momma gave me.

  3. Speaking of shaking it at the gym, I was on the bike yesterday and there was this girl who was actually dancing (somewhat Latin is style) around the track in between her sprints. She was seriously loving life. At one point she jumped up to hit a sign and was just really exuberant. I actually had to lol when she did that… oops.

  5. I am so happy to hear I’m not the only person who listens to Eminem when they work out….”Lose yourself” is still one of my fav pump-up songs. I’m terrified that one day someone is going to go through my phone and release all my embarrassing music to people!

  6. Yum that looks so delicious!! I found out earlier this year that I am allergic to Quinoa (say what?). I’d make this though and sub in brown rice or barley and it would be just as good.

    I love Gina from Skinnytaste’s recipes they are always so creative.

    I still love Red Hot Chilli Peppers and Pearl Jam so probably a t-shirt from them I think πŸ™‚
